Heritage Grand Bakery values quality, health and tradition. The concept was born from the expression “you are what you eat”. Natural, artisanal foods nourish our minds and bodies, energize our spirit and connect us all to each other and our planet.
We celebrate the simple joy of eating what is truly good. Our Heritage grains are healthier because we practice time-honored methods of milling flour without chemical additives. This tradition, and technique, using unadulterated ingredients, retains more nutrients, and does not deposit unsafe chemicals into our environment. Ancestral bread-making techniques allow the heart of the grain to develop life under the effects of the sourdough and fermentation, thus allowing the dough and bread to grow like all living organisms. The combination of ancient grains, pure water and natural salt creates the magic.

Allowing bread the length of time it needs to properly develop and not rushing the process, is one of the fundamentals of bread-making. By honoring the ancient art of “boulangerie” and going ‘long’ on time, we create breads that are both healthier and deeper in flavor. Establishing direct relationships between producers, artisans and consumers while sourcing ingredients locally is how we achieve short on distance. The result is healthier, fresher food, and a wholesome and respectful community

Drawing on our concept of short on distance, Heritage Grand Bakery protects the planet with a significantly smaller carbon footprint than mass-produced breads. Heritage grains are more easily digestible and nutrient-rich than highly processed industrial flours.
TRANSPARENCY IN PROVENANCE AND PROCESS
Heritage Grand Bakery is committed to transparency about our ingredients, sharing with our customers detailed information on the origins, history and nutritional value of the grains we use. Our transparency extends to our process. We open the doors to our customers, giving them access to a metropolitan mill. We produce all our organic doughs on-site, where the customer can witness for themselves our artisanal bread, pizza, and pastry dough-making processes.
